Sweet potato quiche

Method
• one pack of spelt pastry (homemade or store bought)
• 400 grams of sweet potatoes
• 3 red onions
• 3 cloves of garlic
• fresh thyme
• 2 tablespoons of green pesto
• 50 ml soya cream (or normal cream)
• 50 ml soya milk (or normal milk)
• salt and pepper to taste
• one teaspoon turmeric
• one teaspoon paprika
• one tablespoon nutritional yeast
• two tablespoon crushed walnuts
• one tablespoon chia seeds
• Peel and cut the sweet potatoes into cubes.
• Cut the onions into small slices.
• Into a preheated pan add a teaspoon of olive oil.
• Add the garlic.
• Add the fresh thyme to the pan.
• Add the onions and the sweet potatoes and let them simmer for 15-20 minutes until they are almost cooked.
• Add the pastry into the form.
• Create with a fork holes into the pastry.
• Add the walnuts and chia to the form.
•Into a separate bowl add the soya milk with the soya cream.
• Add to it salt and pepper to taste. Add nutritional yeast, paprika, and turmeric.
• Add to the bowl the cooked sweet potatoes. Mix everything well.
• Add everything to the form and top up with pesto
• Bake the quiche at 180 degrees for 40 minutes.
