Banana Bread

Ingredients
Method
• 5 ripe bananas
• 50 ml coconut milk (or another type of milk)
• 3 Tbsp coconut oil
• 250 grams spelt flour
• 1 Tsp bicarbonate of soda
• 1 Tsp backing powder
• 1 Tbsp orange peel
• 1 Tsp ground cardamom
• 1 Tsp cinnamon
• 1 Tsp vanilla powder
• 100 grams Pistachios (or other nuts)
• For decoration: Pistachios and coconut flakes
• Mix the milk with the coconut oil in a pan on low heat until dissolved completely.
• Mix all the dry ingredients and spices separately.
• Mash the bananas with a fork in a bowl.
• Add to the dry ingredients the bananas and the coconut milk with the oil.
• Bake it at 180 degrees for 45 minutes.
• Enjoy it with some fruits or marmalade.
